Juar Jo Dodo is a Sindhi style rustic bread made with sorghum or Jowar flour. It’s an easy dish to make and you can serve this for breakfast with just pickle.
We are on J in the A to Z Indian Breakfast series and the other choice I had for J was Javvarisi or Sago. When I read about Juar Jo Doda, I decided this would be easy to make and a good one.
I followed Alka’s recipe and though she said the oil added makes it a bit unhealthy for weight watchers, however, I didn’t feel like that. The dough is kneaded with hot water along with other spices to make a wholesome flatbread on its own.
Jowar or Jonna is a staple flour in our home. Athamma mostly makes jonna rotti her native style, which is dry yet so very tasty. We make Bajra in this style. So I decided to make Jowar roti as a method. The only difference is the addition of Green Garlic.
If green garlic is not available, you can pound a mixture of dry garlic with coriander leaves. However the fragrance of fresh green garlic can’t be compared. I was lucky that I still have the frozen green garlic that Vaishali gave me. Well what to do, I have safeguarded the slash well.

Ingredients used in making Juar Jo Doda
Jowar or Jonna or sorghum is a whole grain that is healthy and can be included in your diet. I have different recipes to use this whole grain.
We use fresh coriander and green chilies to spice up this roti. Fresh green garlic is the highlight of this flatbread.
The most important ingredient in this flatbread is the Green garlic which is the tender garlic and looks like a scallion or green onion. Green Garlic is saayi thoom in Sindhi.
How to make Dodo
We can use hot water to knead the dough so that you can pat it down evenly. Since you add onions, it becomes a little tough to pat it down properly, however, you can slice it as julienne to pat it better.
There are many ways to pat it down like you can use a muslin cloth or a plastic sheet to pat it down and transfer to the hot tawa. Or you can pat it down directly on hot tawa. You got to be very careful as you got to be very quick to pat it down or spread wide.
How to serve the Juar Jo Dodo
You can serve this rottis with pickle and curds, dal, or any vegetable side dish.
- 1cup Jowar Flour
- 2no Green Chillies increase as per taste
- Handful Coriander leaves
- 1tsp Green Garlic
- Salt to taste
- 2tsp Cooking Oil
- Water hot, to knead the flour

For each Dodo you can use one large cup of flour.

In a wide bowl, take all the ingredients.

Bring the water to a boil and carefully add to the flour.

Mix using a spoon until it mixes well. Then carefully knead to a soft dough using your palm.

Heat a tawa, then divide the dough into smaller balls, if you want.

Pat well between your palms, you can wet your palms with water to avoid the dough sticking to your palm.

Then carefully place this on the how tawa and further pat it down to a thin roti.

You can pat this down on a plastic sheet if you are not able to pat it with your palm.

Sprinkle the oil over the roti and cook over low flame for the roti to get cooked well.

Flip it over to the other side and cook well.

Serve with pickle and curds.
