Eylanchi | Madakku San from Kerala

The Eylanchi is a sweet pancake from Kerala made with All Purpose Flour, Egg filled with a sweet coconut filling.

Eylanchi is also called Madakku San, sometimes tagged as Love Letters. This is a regular pancake batter cooked as dosas and filled with filings. This surely makes a wonderful tea time snack, if you remember not to make it too sweet, in which case it can be served as a dessert.

I did exactly that and served it as dessert. This is much similar to Alle Belle. The batter can also be made with a mix of rice flour along with maida. Since I wanted to try a new recipe, I added rice flour as well along with Maida but simply excluded eggs. For the fillings, the coconut is cooked with sugar and then spread over the cooked pancake. Instead of using refined sugar, I went ahead used Palm Jaggery. The final dish was simply amazing. This is from the Malabar region of Kerala and I adapted from Rafeeda’s.

This recipe calls for egg, which I skipped and instead added ½ tsp baking soda.

How to make Eylanchi 1

Eylanchi | Madakku San from Kerala

Ingredients Needed

For the Crepes:

  • 1 cup All Purpose Flour / Maida
  • 1/4 cup Rice Flour
  • 2 /3 Milk increase if required
  • 1 cup water
  • A pinch of salt
  • 1 /2 tsp Baking Soda

For the Filling:

  • 1 cup Coconut grated
  • 2 tbsp Palm Jaggery regular sugar can also be used.
  • 1 tsp Ghee

For the Batter

  • Mix all the ingredients in a bowl and make a thin batter
  • Let it sit for 10 mins for the soda to react.

For the Filling

  • Mix the sugar along with coconut and keep it aside.
  • I melt the jaggery so had to cook it further to make it thick

Assembling the pancake.

  • Heat a nonstick pan, grease well.
  • Pour a ladleful of batter and cook on both sides. Keep it aside.
  • Spread a spoonful of filing in the center and roll over it.
