Cheesy French Fries with Mayo

Cheesy French Fries is deep fried french fries topped with melting cheese seasoning with spices. This makes a wonderful snack at any time or if you want to enjoy a movie, dig into this sinful snack.

Kids love french fries and mostly I try making it at home when it is a small portion. Else I fall back on the frozen ones when it comes to serving a larger crowd. Even frying that becomes a huge task.

Making perfect french fries is not a hard thing, only you need to have the patience to do repeat frying. So when I make, I try and make a huge batch so that I can fry them at a later stage.

When we watch a movie at home, kids end up getting lays chips. Sometime back Konda wanted something cheesy and since I had these fried chips handy, I made this right away for her. I was inspired by the dish I had in a restaurant and had baked it the previous time I made it.

Ingredients Needed

For the French Fries

2 cups Potatoes approx 4 to 5
Cooking Oil for deep frying
Salt to taste
Pepper for seasoning

For the Cheese Topping

1 tbsp Mayo Sauce
1/4 cup Mozallera Cheese
1/4 cup Cheddar Cheese
Italian Seasoning
Garlic Powder

For the French Fries

Wash well and peel your potatoes and cut into chips – approx 1 cm for thick cut chips, half that for thinner ones. Rinse well under cold water, then drain.
Put the chips into a pan of cold, salted water, and bring to the boil. Turn down the heat, and simmer until just soft to the point of a knife.
Drain, pat dry and allow to cool, then put in the fridge until cold.
Heat your kadai with oil. Check with one chip to ensure the oil is hot enough. Then add a batch of chips. Don’t overcrowd the pan. Blanch for about five minutes until cooked through but not colored.
Remove, drain, pat dry with tissue paper, and again refrigerate.
When you’re ready to eat, heat the oil again to hot enough to fry and add the chips. Cook until crisp and golden, then remove, drain, season.

For the Cheese Topping

Transfer the fried chips to a microwave safe bowl.
Drizzle some mayo sauce over it.
Top with grated cheese and season on top.
Microwave for 30 secs or until the cheese melts.
Serve with Mayo Dip
