Khobz al tawa is a delicious bread from Yemen, it is especially popular in Aden and the southern areas. It gets the name tawa since it is cooked on a griddle or tawa. This is a layered flatbread with each layer greased with butter. Makes a wonderful bread to enjoy a creamy gravy.
When you stuff Khobz al Tawa is stuffed with egg and cheese, it’s called mutabak. With simple ingredients, it is nevertheless so delicious to enjoy with any side dish.
While I was checking out for flatbreads starting with K, I came across Kutti or Punjabi Choori, which is actually indian roti crumbled with sugar. Since I was working on a subtheme, having another sweet bread was out of question.
So I struck with Khobz al Tawa that seem to have been tried by all my BM friends. I wanted to pick up from my friends and settled on Sapana’s version. I also referred Queen of Sheba, one of the popular sites on Yemeni Recipes.
I served it with a creamy vegetarian gravy and mutton gravy for the nonvegetarians at home. Everybody loved how buttery it is.

Khobz al Tawa ~ Yemeni Bread
Ingredients Needed:
4 cup All Purpose Flour / Bread flour
1 1/2 cups Water
1 tsp Salt
1/2 cup Butter melted
How to make Khobz al Tawa
Take the flour in a wide bowl along with salt, and water. Knead a smooth dough, let it rest for 20 minutes.Make 4 balls from the dough .
Take on ball on the rolling board and roll it as thin as you can. You can also stretch it thin by tossing over the board.
Apply melted butter all over the thin rolled sheet. Fold it side by side applying butter on each side.
Once you made the square , let it rest for 5 minutes more and then roll it a little bit more.
Heat a Tawa and apply some butter over it. Transfer the rolled square over it and let it cook for 5 minutes. Flip the side and cook again.
Serve hot with any side dish or tea.
