Aam ki Launji is a quick and easy pickle to make with raw mango. This pickle is made by cooking the mangoes with spices and powders that make it a wonderful side dish for rotis.
First of all when I decided to make a menu for Rajasthani Thali, I thought I could include so many other dishes as well. Then I realised that I may not have enough time to prepare all of those. Finally I knew I had to make one chutney/pickle atleast and this Launji seemed so easy as it hardly seems to have time to get cooked. Just as I thought the recipe is very simple and I made a small portion and enjoyed it with the meal.
The whole meal turned out to be so good that I wished I had more time to include some more dishes. Though we do have so many mango chutneys and pickles, we have never made it this way with so many spices.

Aam ki Launji | How to make Aam ki Launji
Ingredients Needed
1 cup Mango Raw cubed
2 tbsp Cooking Oil
1/2 tsp Fennel Seeds / Saunf
1/4 tsp Nigella Seeds /Kalonji
1 tbsp Coriander Powder / Dhania Powder
1 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
1/4 cup Sugar
Salt to taste
How to make Aam ki Launji
Heat a nonstick pan with oil, add the fennel seeds and nigella seeds and sauté on a medium flame for a few seconds.
Next, the peeled raw mango cubes, mix well and cook on a medium flame for 2 minutes, stirring continuously.
Add 1/4 cup of water, coriander powder, chilli powder, turmeric powder, sugar and salt, mix well and cook on a medium flame for 2 to 3 minutes with lid covered.
Allow the launji to cool completely.
Once cooled, serve or store in an airtight container and refrigerate.
