Aratikaya Nuvvu Podi Vepudu is a classic stir fry from Coastal Andhra, part of Andhra Cuisine. I love plantain fries and make it in different ways for lunch.
There was a time when Amma used to pair different dals and sambar with each of the different ways she used to cook this vegetable. Since she never used to make Potato Roast, she often used to make Plantain and Arbi, both my favourite. Thinking back now about my growing up period, I felt she used to make my favourite dishes almost every day for the meal.
It is surely one important aspect you miss out not being in your parents’ house. I know they pamper me even now. It is also another factor I remember while cooking for my kids. Unfortunately, they hardly eat anything new or different.
Coming back to the plantain stir fry, while making the Andhra Thali, I had referred to Padma’s recipes and decided the menu. This recipe is also from her and we had a hearty meal. This was part of the Coastal Andhra Thali I made some time back, that also had Thotakura Pulusu, Chakkara Pongal,, Munakkaya Jeedipappu Masala Kura , Putnala Podi
Aratikaya Nuvvu Podi Vepudu is part of the BM#74, Week 2 that starts today. I will be sharing from regular stir fries that are made at home, some new and some old. Hoping you will enjoy these.
Step by Step Pictures for making Aratikaya Nuvvu Podi Vepudu Aratikaya Nuvvu Podi Vepudu
2 cups Plantain diced into 1″ pieces
Salt to taste
1 tsp Red Chili powder
1 tbsp Sesame Seeds
A pinch Turmeric powder
2 tsp Cooking Oil
1/2 tsp Mustard Seeds
Wash and chop the plantain into a half. Pressure cook for a whistle with just enough water.
Once the pressure falls down, peel off the skin, and chop into 1″ pieces.
Heat a nonstick pan, dry roast the sesame seeds till it splutters. Cool it before making a powder.
Heat the nonstick pan with oil. Temper with mustard seeds.
Then add the chopped plantain, saute well.
Next, add the salt and turmeric powder. Combine for all the pieces to be coated well.
Then add red chilli powder and mix. Cover with a lid for the spices to get mixed well.
Now add the powdered sesame powder and mix.
Serve as part of the thali.
