Randeri Aloo Puri is a popular Surati street food that is a typical chat and chat loves will enjoy this much! These are small pooris topped with white peas gravy and other chat items to make a sinful delight.
When I chanced on this street food, I was sure I am going to make it. First of all, it met my need to make the main course in the theme, and also knew my kids will love it as it has all chat items topped on it. Second, my surati paratha that would be the main dish featured didn’t turn out as pretty as I expected. So I plan to make it again.
Coming back to the Aloo Puri, I saw many videos that showed how they make it and finally settled on a mix of these recipes to make it at home.
All of us simply loved this one, it can double as a main course too if you plan it well ahead. In all the themes I made for this Mega BM, this street food was a total hit apart from the platters.

Step By Step Pictures for making Aloo Puri
Ingredients used for making Aloo Puri
The puris are mini sized ones, so roll out a big one, and using a small cutter you can cut out many at one time.
The gravy is not very spicy, so use the green chili chutney very liberally if you want it spicy. Some videos showed only with green chilies, I used coriander leaves as well.
- 1cup All Purpose Flour
- 1tsp Cooking Oil
- Salt to taste
- Cooking Oil for deep frying
- 1cup Yellow Peas
- 1cup Potatoes
- 1tsp Ginger Chilli Paste
- A Pinch Turmeric powder
- A Pinch Asafoetida / Hing
- Salt to taste
- 1tsp Garam Masala
- 5 Green Chilies
- 1/2cup Coriander leaves
- Salt to taste
- 2 to 3nos Kokum
- Salt to taste
- 1/4cup Water
- Onions sliced
- Spring Onions finely chopped
- Papdis broken
- Sev
- Boondi

Take the flour along with salt in a wide bowl, slowly add water to knead to a stiff dough.

Divide into big balls and dust well.

Now roll out to a big poori from which you can cut out 2 inch diameter pooris.

Continue with the entire batch and deep fry in batches. Keep it aside.

Wash and soak the white or yellow peas overnight. Change the water a couple of times before pressure cooking it till it is well cooked.

Heat a nonstick pan with oil, add ginger green chili paste saute well.

Add hing, boiled potatoes, turmeric powder, and salt. Saute well.

Add the cooked peas and the required water and bring to a boil.

Finally, add the garam masala and mix well. When ready, keep it aside.

Make a smooth paste with coriander leaves, green chilies, salt, add little water. Some suggest making only with green chilies.

Soak Kokum for 1 hour add salt and water grind it to a fine paste.

In a serving plate, place about six pooris, top it with the peas gravy.

Next add the green chutney, followed by kokum chutney, sev, boondi, and broken papdis. I skipped spring onions as I didn't have. So I skipped onion slices as well
