Shahi Khichdi is a rich preparation with rice, mixed lentils, and vegetables along with various roasted nuts included. This is a one pot meal even and very quick to make, even though it has a long ingredient list.
I made not of this from Viji’s space where she talks about this being the North Indian version of a royal feast and not our South Indian version of Kichidi. In the South, we call the upma made with semolina and mixed veggies as Kichidi. Whereas in North India, the gooey mix of rice and lentils along with spices, lentils, and vegetables is called as Khichdi.
Coming to this recipe, her North Indian friend called this as Shahi because of the rich ingredients included in it. The ingredient list is quite long, though the procedure is very simple as everything is dumped into a pressure cooker and cooked to a soft texture. The final garnish of roasted nuts was a real feast. I served it with Pickle.
Shahi Khichdi is my choice for S in the AtoZ Biryani/Pulao/Khichdi Festival that’s happening for the April Mega Marathon, where I have opted to make 26 Rice dishes. If you are interested to know what I am doing for S in C4AS, go ahead check it out!
