Koraishutir Kochuri | Bengali Stuffed Peas Pooris

Koraishutir kochuri is a pea stuffed maida poori from Bengali and is one of the finest delicacies you can enjoy from their cuisine.

Peas stuffed Pooris have been my favorite ever since I came to know about these. The first time was when I had visited Calcutta and got introduced to it in the city. What a joy it was! Later we were invited for dinner and feasted on these peas stuffed pooris.

Since then I have made different versions of this stuffed pooris and always end up remembering our one week stay at Calcutta when my parents lived there for 2 years. It is still one of the longest vacations we took with family when the boys were still babies.

So when I was making this list, I again thought about those days and remember seeing an authentic recipe starting with K and went in search of it. I have made Radhaballabhi, which is dal stuffed pooris. Then I have some Matar Luchis, Matar Kachoris, Stuffed Peas Pooris, Thanks to this post, I went back reading those and got so nostalgic all over again!. Never realised a simple Stuffed Peas Poori can invoke so much!

Anyway, I decided to make yet another version of these pooris that I had bookmarked and set about making it. Everybody loved it and the masala came out so well! I adapted the dish from here and had to make a smaller measurement and in the process had to change certain things. I had to grind the masala along with peas and then stuffed it.

Bengali Peas Kachauri

Koraishutir Kochuri | Bengali Stuffed Peas Pooris

For the Outer Layer

2 cups All Purpose Flour / Maida
Salt to taste
1 tsp Ghee

For the Peas Stuffing

1 cup Peas Fresh
3 to 4 no Green Chillies
1 inch Ginger
2 Cloves
1 long Bay Leaf
Salt to taste
1 tsp Cumin Seeds
2 long Dry Red Chillies
A Pinch Asafoetida / Hing
2 tsp Ghee
1/4 tsp Garam Masala
Cooking Oil for Deep Frying

For the Outer Layer

Knead the flour with salt and ghee with enough water to make a soft dough.
Keep it aside with a muslin cloth covered

For the Peas Stuffing

Heat a nonstick pan and dry roast the clove, red chilies, bay leaf, and cumin seeds. Powder it to a fine powder once it cools down.
Since I used frozen peas, I blanched it in Microwave for 5 mins.
Once the peas cool down, add it to the spice powder along with ginger, green chilies. Add little water as required to make a fine paste.
Heat a nonstick pan with ghee and temper with hing.
then add this ground paste and dry cook it.

Making the Koraishutir Kochuri

Divide the dough into equal balls.
Flatten the ball and stuff with small balls of the stuffing.
Seal well and roll it to a 4 inch circles.
Heat a kadai with oil and when hot, gently drop in the pooris and cook on both sides.
Serve with dal.
