Dürüm ~ A Turkish Wrap

Dürüm is a Turkish wrap filled typically with a doner kebab and the wrap is made from Lavash or Yufka flatbreads. Apart from the doner Keba, lot of other vegetables can also be added to make this a complete meal.

While I had a couple of other dishes for D, I kept coming back to this for various reasons. The other dish that I had shortlisted was Dakos, which was really so simple like Tomatoes and Cheese topped with Rusks from Greece. Since I was also particular to pick one from different countries, I had to come back to Durum.

The filling is most the meat based Kebab and I was inspired by this recipe and wanted to go with a vegetarian Kebab with all the other addons. So I used Vaishali’s Masoor Dal Kebabs and used the other frills that went with this. The many recipes I checked on this street food, had even regular Indian Roti being used for this wrap.

So I decided to kill two birds and went with my choice of flatbread and added masoor kebabs, fried potatoes with onions, lettuce, some extra protein and sauces. This wrap is very filling and can easily make it up for dinner or lunch. I had a mayo served on the side along with yoghurt sauce. It was perfect and Konda wanted more! Anyway, I think any wrap with a lentil kebab and all other dishes surely make a dish tastes so good!

One interesting factor about street food is you can always improvise on that make it suit to your palette. I so enjoyed having this for a meal. The flatbread I used for this will be revealed later and updated.

D Dürüm ~ A Turkish Wrap

For Masoor kebab

1 cup masoor daal
1/2 cup Chana Dal
1 big Potato boiled
1/2 cup Mint finely chopped
1/2 cup Coriander finely chopped
1 tbsp Ginger Garlic paste
1 tbsp Green Chilli Paste
1 tsp Garam Masala
1 tsp Red Chilli Powder
1 tsp Chat Masala

Other Ingredients

2 Flatbreads
2 cubes Grilled Potatoes
2 cubes Grilled Paneer
Onions
Tomatoes
Lettuce
Mayo Sauce
Tomato Sauce

Making Masoor kebab

Wash and soak the dals overnight.
Boil both the daals in separate pressure cookers.
Drain excess water from the dals and let it cool.
Mash the daals and roast them in a nonstick pan till dry.
Add boiled potatoes and all the spices, herbs. Remove and cool.
Mix well and check for spices. With greased hand make kebabs.
I pan cooked these in a greased nonstick pan and they turned out great.

The original recipe called for 1/2 cup oats powder and 3 pods of Black Cardamom powder. I skipped these two.

Assembling the Durum

Make the Flatbread and have it read.
When ready to serve, spread the mayo and place all the vegetables as per your preference.
Place the Masoor Kebab along with grilled potatoes, paneer and other toppings.Wrap tight and serve with sauce.

Making Masoor kebab
  1. Wash and soak the dals overnight.
