Chatamari | How to make Nepali Pizza

Chatamari is a Nepali Pizza or Newari Pizza popular as a street food comes in different versions like Egg Chatamari, Keema Chatamari and Plain Chatamari. This popular Street food has Rice crepe as the base, with various toppings made just simple vegetarian toppings to meat toppings along with Nepali spices. Most street version often has cheese and egg on top.

The Chatamari is cooked on the stovetop with all the ingredients going one after the another to get done in one shot. This dish hardly takes more than 5 to 7 mins to get done.

The pizza crust has a delicious crunchy texture because thin rice batter is used. I heavily adapted this dish to suit my own taste. I referred a couple of online sites and majorly got inspired by this recipe. However, since this is a street food, I took the liberty to mix based on different sources to my own preferences.

Since the popular versions seem to have egg omelette included, I made a vegetarian version by using Chickpea flour or Besan and added all the other spices, topped with vegetables and cheese. If you want you can top it with minced meat or omelette as your choice.

Finally, in addition to this Chatamari, I had a choice to pick like Coxinha, Cha Gio, Chalupas, Carrozza. However, since I was also keen not to repeat countries, I had to skip all these and stick to Chatamari from Nepal. So for the A to Z International Street Foods, it was a delicious Pizza with a twist. This Nepali Pizza is actually so easy and hardly takes time, that I literally procrastinated making this and attacking other dishes that sounded complicated.

As I had mentioned Konda has been busy but I made she was around during the tasting part as she was the only person who would willingly test my creations. So we had a good in between meal and with all those cheese and the crispy rice base, it was so delicious. I suggest you really have a thin Rice pancake cooked in Butter.

This is a Vegan dish if you replace the butter, in fact, the original dish calls for cooking oil, I replaced it with butter. I thoughts what’s street food if not for indulgence.

Chatamari | How to make Nepali Pizza

Ingredients Needed:

For the Rice Layer

1 cup Rice Flour
Salt to taste
Pepper to Taste

For the Besan/ Chickpea layer

1 /2 cup Besan / Chickpea flour
Salt to taste
Pepper to Taste
1 /2 tsp Red Chilli Powder
1 / 2 tsp Cumin Powder
1 / 4 tsp Coriander Powder

For the Vegetable Layer

1/2 Onion finely chopped
1 no Tomato diced
1 / 4 Capsicum
1 no Green Chilli finely chopped
A PInch Turmeric Powder
Salt to taste
1/4 cup finely chopped fresh coriander

Other Ingredients
4 tbsp Mozzarella Cheese
1 tsp Butter per chatamari

How to make Chatamari

For the Rice Layer

In a bowl, mix the Rice Flour, Salt and Pepper. The consistency should be very thin and you should be able to pour the batter and swirl it on the pan.

For the Besan/ Chickpea layer

In a bowl, take the Besan, add Salt, Pepper and other spice powders. Add water and make a thin batter. Let this set for 2 mins, while you prep the vegetables.

For the Vegetable Layer

Shred all the vegetables very fine or thin. You can mix all the vegetables together with the seasoning and let it sit for a couple of minutes, while you prepare the layers

Assembling the Chatamari

Heat a nonstick pan with butter, quickly pour a ladleful of Rice batter and swirl it around to coat well.
Simmer and pour the chickpea batter into circles and not completely covering the rice layer.
Top it with the chopped vegetables and finally garnish with grated cheese. Cover with lid for the cheese to melt.
This entire Chatamari needs to be cooked in slow flame.
Serve hot with a sauce on side.

Recipe Notes

The original recipe calls only for cooking oil. I added butter to make it more interesting. This is a typical Vegan dish.
