Merry Chritmas to my readers!
Here’s the Eggless Fruit Cake that I made for this year’s Chritmas. It’s a delicious mix of dry fruits, nuts soaked in Orange and Mosambi Juice for over 24 hours. I used brown sugar and the cake was moist and sweet enough to make it as a Tea Cake as well.
With two days off, I was lazy around and could bake only one cake. Will be back with another one soon.
Eggless Christmas Fruit Cake
Ingredients
For Fruit Soak
- 2tbsp Honey
- 1/2cup Orange Juice
- 1/2cup Mosambi Juice/ Sweet Lime juice
- 2tbsp Orange Marmalade
- 3/4cup Dried Fruits(Raisins, Currants, Walnuts, Cashew nuts, Almonds, Dates, Pista)
For the Cake
- 1cup All purpose flour
- 1/4cup Wheat flour
- 1/4cup Butter
- 3/4cup Brown Sugar
- 1tsp Baking powder
- 1/2tsp Baking Soda
- A pinch Cinnamon Powder
- AlmondsBlanched, to decorate
- 2tsp Caramelized Sugar Syrup
Instructions
For Fruit Soak

Make a juice of both Mosambi and Orange together, sieve the fibre and keep the juice alone aside.

Chop all the fruit fruits and nuts. Take it in a bowl, add honey and the juice. Mix well and let it stand for 12 hrs outside. Then refrigerate for another 12 hours.
For the Cake

Soak 15 almonds in water and peel the skin. Keep it aside.

Take 2 tbsp brown sugar in a pan on flame, stir with a spoon, sprinkle few drops of water. Simmer till the sugar melts and caramelises. Keep it aside.

In a bowl, take the brown sugar, butter, cream well. Then add the soaked fruits. Mix well. Then add the orange marmalade. Blend well.

Add cinnamon powder, baking powder, baking soda and mix well. Let it rest it for 10 mins.

Add all purpose flour, wheat flour and mix gently. Add the caramel. Combine slowly.

Preheat the oven at 170C and line a baking tray with parchment paper.

Transfer the batter to the baking tray, pat it down. Garnish with blanched almonds.

Bake at 170 C for 45 mins. Let it rest for 10 mins before slicing down.
