Amazing Branana Chocolate Chip Muffins

I know it may not seem like it at times, but I have been trying to eat a bit healthier lately.  Having a heart scare does that to you I guess.   IN any case, I know it is impossible to be good 100% of the time, but even if I can be good 80% of the time that's an improvement and these delicious Branana Chocolate Muffins really help me to do just that!

Believe it or not, these moist and delicious muffins have only 1 TBS of fat in the whole recipe!  Yep, that's not a misprint . . .  only 1 TBS.

And if you use coconut oil like I do . . .  then it's a healthy fat.   Not only that, but they are stogged full of oat bran!  Oats are good for the heart.

Banana and buttermilk help to keep them moist.  Also there is no refined sugar in the recipe . . .  only honey and molasses . . .

There are also no eggs, which means that if you have someone who is allergic to eggs in the house, you finally have a muffin recipe that they can enjoy right along with the rest of you.

In fact  . . .  the only really naughty things about these are the chocolate chips, but  . . .  what the hey, you gotta have a little bit of fun eh?

*Amazing Branana Chocolate Chip Muffins*
Makes 10
These are healthy, healthy, healthy.  No sugar.  Very little fat.  No eggs.  Oh, and did I mention they are delicious and incredibly moist?   

180g of oat bran (1 1/2 cups)
80ml buttermilk (1/3 cup)
2 medium bananas, peeled and mashed
(make sure they are really ripe, with plenty of brown spots on the skins)
1 1/2 tsp vanilla extract
140g of plain flour (1 cup, sifted)
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda (baking soda)
1 tsp ground cinnamon
1/4 tsp salt
1 TBS coconut oil, or butter, melted
60ml of liquid honey (1/4 cup)
60ml of molasses (1/4 cup)
90g of semi sweet chocolate chips (about 1/2 cup)
(plus extra to scatter over the tops)

Measure the oat bran into a bowl.   Mix in the buttermilk, mashed bananas and vanilla extract.  Allow to stand for at least 10 minutes.  This should be enough time for the bran to soften.


Preheat the oven to 180*C/350*F/ gas mark 4.  Spray a 10 cup medium muffin tin with non stick cooking spray.  Set aside.

Sift together the flour, baking powder, soda, cinnamo and salt.   Whisk together the coconut oil(butter), molasses and honey.  Stir the wet mixture into the buttermilk/banana/oat bran mixture to combine well.   Fold in the dry ingredients just to moisten.  Stir in the chocolate chips.  Divide the batter amongst the prepared muffin cups.  Scatter a few chocolate chips over top of each.

Bake for about 20 minutes, until the tops are just barely firm to the touch.   Cool in the pan for five minutes before turning out onto a wire rack to finish cooling.
