Rajma Aloo Tikki Sandwich ~ Back to School Recipes for Kids


Learn to make these easy and healthy Potato Kidney Bean Patties Sandwich and pack for your kids snack box.



Offlate we got into the habit of having soaked lentils, ready at hand to be boiled and used. On that account you could now see us always stocked with soaked channa, rajma etc. When we are confused on what to cook, we simply take these and cook. Previously I always had problems with cooking the rajma completely. However with this practice, the rajmas get cooked well.



When deciding what to make for the backed snack box, which also at times acts as the breakfast box if Konda didn't have her breakfast at home. so for one of her snack boxes, we decided we would send these Tikkis on bread. The options and the ways you could work on this patties and the bread as such, can be so many ways. However you can make it simple and plain as well.



Instead of deep frying, the patties are cooked over pan and these are very healthy on the oil front, apart from being protein power packed. I personally never want to deprive my kids of their fats, chocolates and what not. However when we can avoid, we should. so these packed snack boxes turned out to be very filling and healthy as well!




Rajma Aloo Tikki Sandwich



Ingredients Needed:



Rajma, boiled - 1 cup

Aloo, boiled - 1 cup

Green chilies, ginger, garlic paste - 1 tsp

Garam masala - 1 tsp

Turmeric powder a pinch

Salt to taste

Butter - 1 tsp

Onion, minced - 1/4 cup

Coriander leaves, mint leaves handful



Bread for Sandwich

Cheese Slices, other sandwich ingredients as per taste



How to make the patties



Soak and boil the rajma till soft. Using a masher, mash the lentils to a soft paste.



MW potatoes, peel, mash and keep it aside.



Heat a non stick pan, add butter, saute the green chilies, ginger, garlic paste. Cook for couple of mins.



Then add the minced onions, cook till they turn colour. Add the mashed rajma, salt, garam masala, turmeric powder, coriander and mint leaves. Combine everything together.



Remove and then add the mashed potato. Mix everything well, adjust spice as required. Divide into equal balls, pat them into discs and roast over a greased non stick pan on both sides.



For making the sandwiches, butter the bread slices, sandwich the tikkies in between the slices, you can add cheese slice to one slice, press the tikkies over it and place the other slice, grill it for couple of mins, till the cheese starts to melt.



Slice and pack.


Notes:



You can try different seasonings to this, Add tomatoes, onion rings before grilling.



You can also pack these separately and have your kid assemble it just before eating.
