1. CHILI BEEF AND PEPPER: Add heat (chili) to this beef and pepper stir fry dish and feel the zing of a classic combination that wakes you up from a tired day out. Great to go with beers too. INGREDIENTS:


400 g fillet steak, slicedTwo tablespoons of corn flourThree tablespoons of ground nut oilA thumb size of ginger, peeled and gratedTwo to three sliced garlic clovesOne to two American cups of red chili, seeds removed, finely choppedTwo red bell peppers, cut into chunksTwo teaspoon of dark soy sauceTwo tablespoons of light soy sauceTwo tablespoons of vegetable stockOne teaspoon of sesame oil

THE PROCEDURE:


In a mixing bowl, mix the beef slices with the corn flour and stir to coat. Set aside for frying.Heat a wok over high heat on your American stove and add the ground nut oil until it smokes.Add the garlic, the ginger and the red chili to stir quickly for a few seconds so they do not burn.Now add the beef slices and fry until browned or cooked through.Transfer the contents of the wok to a plate with a slotted spoon and set aside.Heat the remaining one tablespoon of ground nut oil in the wok and add the red pepper and a little freshly ground black pepper to fry over medium heat for four to five minutes till slightly softened.Return the beef to the wok and toss and stir to combine.Finally pour in soy sauces, the sesame oil and vegetable stock and heat until bubbling.Serve while hot. This has high heat and is not recommended for kids.2. HOT CHILI PRAWNS: Ching He Huang's flash fry makes a stylish first course - ideal for fast and simple cooking.

INGREDIENTS for the sauce:


Five tablespoons of tomato ketchupTwo tablespoons of soy sauceOne tablespoon of sugarTwo teaspoon of corn flour

FOR THE PRAWNS:


Two tablespoons of vegetable oiltwo large cloves of garlic, choppedthree medium red chilies, choppedA thumb size ginger, chopped300 grams of tiger prawns, deveined and shelled200 ml boiling waterTwo teaspoon of strained lime juicetwo spring onions, shreddedfour tablespoons of chopped coriander

THE PROCEDURE:


Mix all the ingredients for the sauce and stir till they are smooth. Set aside for stir frying.Heat a wok or large skillet over your American stove and add vegetable oil. Then add the chopped garlic, the ginger, and chilies, and fry them for about 30 seconds until the chilies have darkened.Then add the prawns to the pan and continue frying for about three to four minutes till the prawns turn pink.Stir in the sauce and bring to a simmer and pour in the boiling water.Sharpen the taste with the lime juice and add the spring onion and chopped coriander.Serve straight away while hot with boiled rice.
