Rajasthani Tikkar aur Sabzi Thali

Rajasthani Tikkar aur Sabzi Thali features the famous Indian flatbread made with Maize flour, wheat flour along with onions and tomatoes. Season the roti with spices and serve as it is or with any side dish.

I adapted this from Vaishali who adapted it from Tarla Dalal. First of all, because I remembered I had this bookmarked for a long time, I finally decided this for the traditional flatbread I should make this. Tikar is a flatbread from the Marwari kitchen. Tikkar is made with made of equal portions of maize flour and wheat flour.

You will find the Maize flour or Makai ka Atta widely used in the Northern States. We do not use it much in South India. Maize is one of the common grain consumed in different forms or eaten as such. Finally, after I started cooking, certainly as a result of blogging, I have been using Maize flour in different ways. Likewise, blogging has exposed us to different ingredients. Athamma certainily used to love it and used to make dosas with it. I guess we probably like it a lot as dosas with gun podi.

Coming to the Rajasthan Cuisine, it is again a cuisine I have cooked a lot of dishes and love all that I have made at home. I have repeated many of the dishes and are part of our regular meals.

With this traditional Rajasthani fare, we come to the conclusion of Thalis features Indian Flatbread. I thoroughly enjoyed making all the regional special rotis and stay away from trying crepes.
