Dondakaya Fry or Dondakaya Vepudu as it’s called in Telugu is a version of this simple dish deep fried and spiced along with peanuts.
In a typical Andhra Thali that’s served in hotels, you are bound to see some deep fried vegetables like a bitter gourd fry or Tindora spiced along with peanuts. This is very common in places like Tirupati served as lunch meals.
Though it’s not a common method to make at homes as we try to curb the deep frying, we do try to make these versions at times, especially with bitter gourd and these dondakaya. I was surprised that I haven’t clicked pictures of this one. Seeing the picture it must be obvious that it wasn’t a planned clicking.
It was more of our meal that I just clicked. Anyway, it turns out very delicious and an excellent way to enjoy this vegetable.
For the second day of One country, One category, I have this Tindora Fry Andhra Style.
Dondakaya Fry | Andhra Style Dondakaya Vepudu
Ingredients Needed:
1 cup Tindora Dondakaya
1/4 cup Peanuts
Salt to taste
1 tsp Red Chili Powder
Handful Curry Leaves
Cooking Oil for deep frying
Wash and chop the tindora lenth wise.
Heat a Kadai with oil, deep fry the tindora in batches and drain to a kitchen towel.
Next deep fry the peanuts and curry leaves.
Add to the bowl of tindora, add the salt and spice and toss well.
Serve along with your meal.
