Vankaya Batani Kura is one of those simplest curries that get done for dinner most weekdays at home. This used to be our favorite and frequent curries done and served with rotis on a busy weekday and you only have about 40 mins on hand to make dinner.
Brinjal is Daddy’s favorite vegetable and Amma makes sure to include this as many times as possible. Hubby Dear doesn’t have an opinion on this and in general never says no for it to be appearing on the table. Though no doubt everybody at home love Nune Vankaya with everything possible.
So this happened during the time I was with Parents for about three days when the whole jingbang left me for a vacation with inlaws. It was like the old college days, enjoying out late dinners and long discussions without any thought in general. Dinners are quite late at parent’s home, meaning if it happens at 8.30 my place, its almost like after 9 in the night which according to the Hubby dear, is very late.
Anyway I can adapt myself to any timing and gave parents all the time they need to get to the table. I came back from work and spent time talking to Amma about everything under the Sun. Then went to get the meal done quickly. So the choice for the three days was already decided. I was planning to make all our favorites for dinner, which also gets done very quickly.
In the time this curry was getting done, the rotis were also made. The whole dinner was done in flat 40 mins with the gravy taking less time than this. The whole time is to get dishes that are quick to make and yet we don’t compromise on the taste or anything that goes in.
This is mostly prepared during winter with the fresh peas and brinjal and winter gravies are easy to make. We use ingredients ground peanut powder, grated coconut or coconut nut for the final touch. Sometimes we left leave it like this.
I was ready with pictures and the content and was supposed to write on time. Things got derailed and here I am up early and writing this. With Hubby dear traveling, I will have more time on hand that will hopefully be utilized in concentrating on the blog, that sadly seems to be left on lurch!

Vankaya Batani Kura | How to make Brinjal Peas Curry
Ingredients Needed:
4 nos Brinjal
1 cup Peas, fresh
1/2 cup Onions
2 medium Tomatoes
1/4 tsp Ginger Garlic paste
1 tsp Red Chili Powder
1 tsp Coriander Powder
A Pinch Turmeric Powder
Salt to taste
Water as required
How to make the Brinjal Curry
Wash and cut the brinjals into 1 inch pieces, soak in water until usage.
Heat a nonstick pan with oil, add ginger garlic paste, then saute the onions till it changes colour.
Next, add finely chopped tomatoes and simmer.
Now add salt and turmeric powder for the tomatoes to get mushy.
Once it turns soft, add drained brinjal pieces, fresh peas and saute well.
Add chili powder, coriander powder and simmer with lid covered for 10 mins till the brinjal turn soft.
Now add water and bring to boil.
Garnish with coriander leaves and serve with Roti
