Finally I managed to bake these Wheat flour based Coconut Cookies after an unexpected delay! This is really such an easy recipe that I knew still delayed it until today.
I was inspired by this recipe and have been wanting to make it. I made my twins help me roll them into balls and even topped it with chocolate chips so that they will enjoy these coconut cookies.
Wheat Coconut Cookies
Ingredients Needed:
Whole Wheat Flour -1 cup
Butter - 1/2 cup
Oil - 1 tbsp
Salt a pinch
Baking Powder - 1/4 tsp
Milk - 2 to 3 tbsp
Powdered Sugar - 1/2 cup
Unsweetened desiccated coconut - 1/4 cup
Chocolate Chips - 1/4 cups
How to make Wheat Coconut Cookies
Mix the wheat flour, Baking powder and salt, keep it aside. In a bowl cream together butter and powdered sugar until fluffy. To this add the coconut and mix well.
Slowly add the milk and knead as a dough. Divide the dough into small equal balls and roll it to a round ball and flatten it.
Top the flatten dough with chocolate chips, and arrange it on a lined baking tray. Continue for the rest of the dough. Refrigerate the tray for 10 minutes. Preheat the oven at 200 C and bake for 20 minutes or until golden brown. Cool it on a wire rack.
Store it in an air tight container
