We are starting the third week of BM#53 and its going to be Ice Creams all the way! While its been extremely hot for the past many months, though I may not be the right person to comment on this, after being indoors almost for about 10 hrs a day, I still get to hear that its very hot and I don't want to dispute that.
When I was deciding on the themes, I just saw the month and knew it will be hot and naturally I wanted to try Ice Creams. While I have made Ice creams in different forms and with different ingredients, there was no other recipe that can get so simplified as what I have for today. Of course, the Pal Ice takes a lead.
Making Ice Creams have always been my passion and is something that I have been doing since school days. I never even thought this as part of cooking as I always end up freezing my milk and enjoying it as Ice. I am talking about a period when commercial creams are not sold and what one thinks of making ice at home, will always end up being somewhat crystallized.
If you want to read on my adventure with Chocolate Ice Cream, you can read and you would know that affair with making ice creams started quite young. I no way claim I had the creamiest ice creams, still it used to be so delicious.
Just as cakes, Ice creams have a science. you beat the cream, which has to be quite heavy so that fat is more. On beating air pockets are formed and then you just fold in other ingredients and quickly freeze before the air pockets break down.
Today 2 ingredient Ice Cream is prepared with just Cream and Condensed Milk. I simply whipped the cream, of course the cream what I get is not heavy and would not peak so much. Then I folded the condensed milk. I added fresh Vanilla extract and set to freeze for over 6 hrs.
Off late seeing their sister getting involved with blog pictures, my boys started showing lot of interest and would want to help me set it up. In this case, they were also very eager to eat the ice cream. I somehow managed to click the pictures before the ice cream started melting. If you noticed, the bowl was about to get overflown with ice cream. Also I was thinking the contrast of vanilla would be seen much on the off white bowl. Sadly there wasn't much time to change bowls or wait.
So I just had to use these as such!
Ingredients Needed
Condensed Milk - 400 ml / 1 tin
Cream - 250 ml
Vanilla - 2 drops
How to make the Ice Cream
In a mixing bowl, take the cream and whip till it peaks. Then fold in the condensed milk and transfer to a bowl.
Freeze for at least 6 hours before enjoying.
Notes
If you use heavy Cream, your Ice cream will set very well. Also do not beat much after adding the condensed milk.
This is the basic recipe, you can create so many flavours from this.
