I had the fortune to have some bananas go very ripe the other day which gave me the opportunity to bake something delicious. I only ever rarely am able to do that as the Toddster eats up the bananas almost faster than I can bring them into the house! He does love his bananas!
He also really loved these muffins. Rich and moist with a delicious swirl of nutella making them quite scrummily moreish! I don't have a lot of photos to share unfortunately, but I think there are enough here to make you want to bake them . . . and you simply MUST, because they are fabulous darlings! Simply F A B U L O U S. Just not that great to look at. Do give them a go!
*Nutella Swirl Banana Muffins*
Makes 12 medium/large muffins
If you like banana muffins and you love Nutella, you will adore these moist muffins with their moreish swirl of nutella!
240g of plain flour (2 cups)
1 tsp bicarbonate of soda (baking soda)
1 tsp baking powder
1/2 tsp salt
4 ripe bananas, peeled and mashed
100g of soft light brown sugar (1/2 cup packed)
95g of granulated sugar (1/2 cup)
1 large free range egg, beaten
1 tsp vanilla.
60g of butter, melted and cooled

Preheat the oven to 180*C/350*F gas mark 5. Line 12 muffin cups with paper liners. Set aside.
Using an electric hand whisk, beat together the bananas, both sugars, egg and vanilla. Slowly whisk in the cooled butter. Sift together the flour, soda, baking powder and salt. Using a wooden spoon, stir the dry mixture into the wet mixture, just to combine. Divide between the lined muffin cups equally. Add a teaspoon of nutella to the top of each. Use the tip of a knife to swirl it in.
Bake for 19 to 20 minutes until golden brown. Tip out onto a wire rack to cool. Store in an airtight container.
