Bhujia Paratha is Sev Stuffed Paratha that has Sev mixed with spices and onions to make a delicious innovative paratha. Kids will simply love this one as it has the crunchy sev mixed with spices.
This paratha is surely a kid-friendly one as you have the delicious crunchy sev stuffed inside a paratha. You don’t actually need a side dish for this, just a pickle and some curds on the sides would be more than enough. When I planned on making this, I wanted to complete another paratha which was on the same lines and will be coming up tomorrow.
So I think I was smart to make the same pickles for serving with these. However, if you thought I gave less work for myself, then no, I had to go and make those pickles the north Indian style so as to satisfy Hubby Dear. He is very particular about the pickles being the North Indian ones when I make stuffed parathas.
In the earlier years, when I was making stuffed parathas, I would always serve with south Indian style pickles. For many years he never said anything, finally opening up when we got a Rajasthani Pickle during one of the fairs we visited.
That’s when he said he only likes North Indian pickles for stuffed parathas. Ever since then I either make it myself or get that one. Since we are not big pickle consumers, the pickle stays on forever. To avoid this, I have ended up making smaller portions myself.
Today’s Green Chili pickle is one such one from the cuisines of Rajasthan and we totally enjoyed the whole platter! For the Day 5 of Indian Flatbread, I have the Bhujia Paratha in the Bhujia Paratha Menu. I have another traditional one in C4AS.

Step By Step Pictures for making these parathas
Ingredients to make this Bhujiya Paratha
We use wheat flour for making the outer layer. You can always include some maida if you wish.
The stuffing has to be made fresh as otherwise, the sev will end up being soggy.
You can add other vegetables to make this healthy.
- 1/2cup Onions finely chopped
- Handful Coriander leaves finely chopped
- 2 to 3nos Green Chilies finely chopped
- 1/2tsp Red Chili Powder
- 1/4tsp Amchur Powder / Dry Mango Powder
- 1/4tsp Chat Masala
- 1/4tsp Black Salt / Kala Namak
- 1tsp Cumin Powderroasted
- 1/2cup Bhujiya Sev
- Salt to taste
- 2cups Wheat Flour
- 1tbsp Cooking Oil
- 1/2tsp Ajwain / Carom Seeds
- Salt to taste
- WaterFor Kneading Dough

Take flour along with ajwain, salt, oil and mix well. Slowly add water to knead to a stiff yet pliable dough.

Let it rest for 10 mins before making the parathas.

When ready to make the paratha, knead again and divide into equal balls.

Making the stuffing ready when you are ready to make the parathas. Else the sev will get soggy.

Take the finely chopped onions, green chilies, coriander leaves and mix in all the spice powders.

Add the sev and combine everything well. Keep it aside.

Take one ball flatten on the sides and keep a spoonful of stuffing in the center.

Enclose from all sides and make sure you cover it well.

Dust and gently roll out to a 7 inch paratha.

Heat a tawa and grease with oil.

Cook the paratha on both sides with ghee/oil

Serve with side dishes.
