Estancia's New Bites: Sigekiya Ramen + Tsukemen

Estancia finally opened its newest wing and it looked really promising! I was so excited to check it out after seeing a few teasers from its Instagram page showcasing new dining concepts. And my first stop: Sigekiya Ramen + Tsukemen.

I usually do a bit of research before visiting a restaurant I'm not familiar. And Sigekiya's 'the ramen loved by Filipinos in Yokohama, Japan' description on its Instagram page sure made me curious. But it was its high 4.3 Zomato rating which convinced me to dine here.
Located at the lower ground of the new Estancia wing, I was surprised that the place was not packed. I dropped by around 2 p.m. on a Sunday and there were only a few tables occupied then. It was a far contrast from the other restaurants in the main wing. Then again, I guess most Estancia visitors are still not aware of the new wing. 
I went with Sigekiya Ramen Lunch Set with 3 Pan-Fried Gyoza (PHP390, small | PHP440, regular | PHP485, large) as recommended by the staff who took my order. Since I wanted to check out two other shops, I went with small. 

There were a lot of small flies around during my visit but the staff on break was quick to take notice that it was pestering me and got a candle for me. (I couldn't really blame Sigekiya as there was still a lot of construction happening left and right in the new wing.)
My ramen was served first and I was surprised that the broth was rather thick. I had an impression that the most basic ramen would be similar to Shoyu or Shio. But Sigekiya's basic ramen was neither. And it was insanely salty! I was so glad that the staff offered clear broth (free of charge) to help dilute the saltiness.
The noodles were rather too thick for my liking but I guess it was meant to balance the overly savory broth. It was cooked well though as it was firm and had a nice bite to it. 
The chashu had a nice clean taste but I found it too thick and a bit tough to bite. I wish that they gave two thinner slices instead. 
If you have room to spare, do try Sigekiya's gyoza. The pan-fried version was great. It was juicy and flavorful in every bite. The light crispiness of the base made it even more addictive. I just don't understand why Pan-Fried Gyoza costs so much more than its boiled counterpart. 
I was told that if I prefer lighter broth, I should get Sigekiya Light Ramen. I guess I'll have to go back to check it out. I'll also try my luck to request for thinner chashu slices. And if you like spicy ramen, Sigekiya is known for its Tantanmen. You may also order additional spice if you're up for the challenge.

P.S. I was surprised that I got a 15% discount off my bill. Turns out that they have an opening promo until August 2020 for all guests!
