Strawberry Crepe Cake – This Works on Many Levels

For the crepes:

5 large eggs

3 1/4 cups milk

2 1/2 cups flour

2 1/2 tablespoons vegetable oil

2 tablespoons white sugar

1/2 teaspoon kosher salt

For the cream filling:

3/4 cup mascarpone

1 1/2 cup heavy cream

3 tablespoons sugar

1/2 teaspoon vanilla

For the fruit mixture:

10 ounce jar of Strawberry jam

2 tablespoons water
