If you are looking for the best Eggless Vanilla Cake, then you are at the right place! This eggless vanilla cake is moist with a firm texture but with a sinfully soft crumb. It tastes absolutely delicious on without any frosting and can be easily made into any fancy cakes. With this as the base, you can create so many flavours.
When Konda baked the Eggless Chocolate Cake, Amma wanted me to bake a Vanilla Cake. Hearing that Konda took it upon herself to bake the Vanilla Cake and when I asked her if she wants a recipe, she said she has bookmarked it already.
This recipe is adapted from here and though I have quite a few wonderful recipes for Vanilla Cake, I don’t think even I got a crumb as good as this recipe. It was that good and I literally enjoyed and feasted on this cake. The cake measurement almost yields a kilogram in weight and imagine indulging all by oneself!
Boys had gone visiting my SIL for a week and then Konda and Hubby dear went to bring them back. Konda baked this the day before their journey and so I ended up having the lion share of the cake. Trust me, it was the best cake I ever tasted. Konda wanted to really confirm if the cake came out so well. I said it was the best.

The BEST Eggless Vanilla Cake Recipe
Ingredients Needed:
For the Dry Ingredients
2 cups All Purpose flour (220 grams)
1 Tsp Baking Powder –
– 1 1/2 Tsp Baking Soda
For the Wet Ingredients
1/2 cup Cooking Oil
1 cup Sugar (200 grams)
1 cup Curds Yogurt / 250 ml
1 tsp Vanilla
1 cup Milk / warm water 250 ml
How to bake
Preheat oven to 170 C / 340 F
Grease and line an 8″ round baking pan.
Combine Dry ingredients in one bowl
Combine wet ingredients in another bowl.
Mix wet and dry ingredients until smooth with no lumps.
Lastly, add warm water/milk and stir well to combine
Pour into the baking pans and immediately place in a preheated oven.
Bake for 30 to 40 minutes until a skewer inserted in the centre comes out clean.
After 10 minutes invert onto a cooling rack and cool completely.
You can serve this as such or decorate with frosting.
