Vyprážaný syr | Fried Cheese from Slovakia

Vyprážaný syr is Fried Cheese from Slovakia. This is a popular street food and very easy to make. It can be served as an appetizer with mayo or tartar sauce for dipping.

These fried cheese are called smažený sýr in Czech whereas in Slovakia it is known as vyprážaný syr. In Czech, these fries are served along with french fries, tomatoes and sauces, almost making a meal of this.

Fried cheese exists in nearly all cuisines but, as you might expect, the cheese changes with each country. I was amazed at the different versions in different countries that have these fried cheese.

In the Czech Republic, the cheese used can be Edam, Hermelin or Niva Cheese and Emmentaler in Slovakia. Bulgarian fried cheese uses kashkaval cheese. But Gouda or Swiss cheese also work well. In Hispanic cultures, it is known as queso frito, the Swiss call it Malakoff, and the Greeks have their saganaki.

However, modern recipes use Gouda or Swiss cheese as well, with the latest adaptation including Mozzarella as well. Mozzarella has become a popular candidate for fried cheese because it has a mild flavour and melts well producing that ooey-gooey goodness people love.

However, before arriving at this dish, it was quite a tough searching for a street food starting with V. I came across Verduri Fritti, which is nothing but batter fried vegetables, exactly our pakodas. How many versions of this can I make!

Especially when the batter calls for eggs, I will again have to replace, which will anyway end up being our own version of pakodas. So I struck to Vyprážaný syr, about which I read about here and here.

Vyprážaný syr was one super duper dish and Konda wanted more of it. I said I still have so many to make and can’t repeat right away. This is surely something I plan to make again.

Vyprážaný syr | Fried Cheese from Slovakia

1/ 2 cup Mozzarella Cheese 1-inch thick slices
Salt to taste
Pepper to taste
1/2 cup All Purpose Flour
1 /2 cup Breadcrumbs
Cooking Oil for deep frying

Wash and cube the cheese to the desired size.
Make a thick batter with flour, salt and pepper. Have the breadcrumbs ready
Heat the oil in kadai
Dip the cheese cubes into the batter, shake off excess batter and roll it into breadcrumbs.
Gently drop these into hot oil and cook on all sides.
Drain to a kitchen towel and serve with your favourite dipping sauce.

  1. Wash and cube the cheese to the desired size.
