Sabich ~ The Ultimate Israeli Sandwich

Sabich or Sabih is a traditional Mizrahi Jewish sandwich popular in Israel, which consists of pita bread stuffed with fried eggplant and hard boiled eggs along with Salad and other condiments.

Apart from Pita bread, Laffa bread is also popularly used. Sabich is an Israeli Sandwich made with the Laffa Bread with different fillings like fried aubergines, potato and eggs that were cooked all through the night along with salad, tahini and amba, which is a pickled mango condiment. I redid my Laffa bread just to make this sandwich again. Wish I had known it earlier I could’ve saved time.

Since I was looking for a vegetarian version of the Sabich, I adapted from this recipe, which called delicious sauces of tahini and amba, which I replaced with Indian Mango pickle as suggested by the author.

Jews are known for their cooking dishes all night. While the European Jews have the Cholent, a heavy casserole cooked with beans overnight, the Yemenite Jews have the Jachnun, a fatty dough roll baked slowly for many hours and The Iraqi Jews have their breakfast the Sabich. This is as per their ancient tradition of keeping the Shabbat where one is not allowed to light a flame. So the observing Jews slow cook their meal before the Shabbat began, to have a warm meal the next day.

The recipe I referred to was a vegan version where smoked Tofu was used since I am not a big fan of Tofu, I replaced with Paneer/Cottage Cheese. I used Laffa Bread with roasted potato slices, grilled Paneer. The other thing is Hummus is not added to the wrap, rather served on the side along with a salad.
To get the flavours that were mentioned in the recipe, I had raw onions, tomatoes along with the other condiments suggested.

2 Laffa Bread
1 small Brinjal / Aubergine, cut into quarters
100 g Paneer / Cottage Cheese sliced
2 medium Potatoes
Coriander Leaves as required
Lettuce as required
Tomatoes Diced as required
Onions sliced as required
Tahini as required
Mango Pickle as required
2 tsp Cooking Oil
Salt to taste
Pepper to taste
Kala Namak
1 tsp Red Chilli Powder

For the Fillings
Slice the potatoes, Paneer and Brinjal, and grill a nonstick pan with just enough oil, till it becomes well grilled or roasted. Sprinkle salt and red chilli powder. Keep it aside.
Once you make the laffa bread, lay it flat, apply Tahini sauce, apply a little of mango pickle.
Over this place the lettuce leaf, all the grilled fillings,
Place the onions, tomatoes over the roasted fillings.
Sprinkle Kala Namak and coriander leaves and fold the wrap and serve
