Qutab is an Azerbaijani stuffed flatbread made with a thin, crescent shaped unleavened dough. The fillings can vary from meat to just about anything. The outer layer is rolled out very thin and folded over cooked fillings.
When I first came about this dish, I was amazed at how exciting the writer was about making this dish with different fillings. The flatbread is a simple one to make. And for filling you can use meat along with various other ingredients.
Of course when the meat is used, it has to be cooked and filled. If you are using cheese filling, it can be salty cheese like Feta. I further read on this dish and came to know that this is served as breakfast dish. Just like our Parathas, very filling and healthy too.
There are different types of Qutab. A qutab can be stuffed with different fillings like meat, pumpkin, cottage cheese and greens. I settled with a recipe that called for cheese and herbs mix.

Step By Step Pictures for making Qutab
Qutab with Cheese and Herbs
Ingredients Needed
For the Outer Layer
1 cup All Purpose Flour
2 tsp Cooking Oil
Salt to taste
For the Filling
1/2 cup Spinach
Coriander Leaves
1/2 cup Onions
1/2 cup Cheddar Cheese
1/2 cup Paneer / Cottage Cheese
Pepper to taste
2 tsp Butter
For the Outer Layer
Take the flour, salt and water to knead to a soft dough. Let it rest for 30 mins.
For the Filling
Heat a nonstick pan with oil, saute onions till cooked. Cook spinach till it wilts.
Add seasoning and keep it aside.
Have grated cheese ready and mix all the ingredients together.
Making the Qutab
Pinch out equal balls from the dough and roll out to a thin layer.
On half of each layer place the cheese filling, fold with the second half, and press the edge with your fingers or a fork.
Heat a griddle or tawa and fry the qutab on both sides until brown spots form.
Transfer to a plate and brush with butter on top and serve hot.
