Sprouts and Mixed Vegetable Stir Fry is a simple and easy dish you can make very quickly. Stir fries such as this has been my meal for many months some time ago. It was a period when I thought I must diet and follow this vegetable diet. I was feeling so full after this meal and never felt hungry as well.
Today’s stir fry is one of the many, I used to carry for lunch. In this stir fry, I have used sprouts, mixed vegetables, broccoli and topped with freshly grated coconut. I can’t specify the cuisine as its something of a fusion. However, its one of the best dishes I had. Sprouted Moong is mostly stocked in the fridge. We sprout the moong and always have it ready. Broccoli is an acquired taste and tastes great as a stir fry.
Sprouts and Mixed Vegetable Stir Fry
1 cup Sprouts
1 cup Mixed Vegetables
1/2 cup Broccoli
Salt to taste
2 Dry Red Chillies
1/2 tsp Coconut freshly grated
1/2 tsp Olive Oil
Water to sprinkle
Steam the mixed vegetables like carrot, beans and peas for 5 mins in just enough water.
Heat a nonstick pan with oil, temper with the dry red chillies, add the sprouts, broccoli and mixed veggies.
Simmer and cover with lid.
After 5 to 7 mins, remove and stir again. Add the salt and freshly grated coconut, mix and remove.
