Xiaodianxin from China | Chinese Almond Cookies

Xiaodianxin means cookies in Chinese and for their Lunar New Year, they make these almond cookies to bring good luck. I seem to have baked quite a few new year related bakes, hoping to bring in loads of luck. These Almond cookies can be prepared with either Almond meal or Almond flour.

Almond flour is fine powder without the skin, while almond meal can be made at home with the skin on. I made my own almond meal and made only half of the recipe. This site was referred and further modified but I am not able to find the source for now.

The recipe I followed didn’t have butter, whereas I added to mine and the cookies had a crisp bite and chewy texture. Everybody loved this one to snack on.

I wanted to leave it with just oil, but since I was thinking I should try the recipe without any modification, the original one seem to have been made with butter, so I added a bit. This was one of the cookies that got baked last Sunday and because I was already baking so many cookies, I made with only 1/4th of the recipe, which gave me 15 cookies. Hubby dear liked it a lot and my colleagues enjoyed it as well. It’s been a cookie day at the office daily. so I glad the cookies get completed.

Almond Cookies

Xiaodianxin from China | Chinese Almond Cookies

1/4 + 1/8 cup All Purpose Flour
1/4 cup Almond Powder Meal or Almond flour
1/4 cup Sugar
1/4 tsp Baking soda
1/4 tsp Baking powder
2 tbsp Cooking Oil
1 tbsp Butter
Almonds for garnish

Preheat the oven to 185 C.
Powder the whole almonds to a fine powder, add sugar and pulse again.
In a bowl, take the flour, almond meal, baking powder, baking soda, oil and butter.
Mix everything to get a dough.
Line a baking tray with a parchment paper. make small balls of the dough, press a sliced almond on top.
Bake for 12 mins at 185C.
Allow to cool before serving.

Chinese Almond Cookies or Xiaodianxin which means cookies in Chinese are made with ground almond and tastes very crispy and chewy. Makes a great snack to enjoy!
