For the second day of the third week of BM#66, I have another Luch Box dish for Kids.
Packing lunch boxes for school going children requires a lot of creative thinking and on top, we have to ensure we pack a balanced meal. Since kids spend very less time in actual eating, we have to send dishes that are easy for them to eat and enjoy before they get distracted by playing.
Planning ahead during the weekend or at least the night before helps a lot. If you are planning on fried rice, you can cook the rice the previous night and refrigerate, this gives the best results. Kids love ingredients like Paneer, Channa, Corn, Potato etc. Plan to include these ingredients along with other vegetables.
Kulchas are made with Maida using curds and baking powder. In this version, wheat flour is used and stuffed with paneer filling. It stays good for the afternoon meal. I often make this for my kids and it is Konda's favorite one.
Paneer Stuffed Wheat Kulchas
Makes: 4 to 6 small sized kulchas
Ingredients Needed:
For the Kulchas:
Wheat Flour - 2 cups
Milk - 1/ /4 cup
Curds / Yogurt - 1/ 4 cup
Baking powder - 1 tsp
Baking Soda - 1/ 2 tsp
Salt to taste
Oil 2 tbsp
For Paneer stuffing:
Paneer grated - 1+1/2cups
Red chilli powder - 1 tsp
Cumin powder - 1 / 4 tsp
Garam masala powder - 1 tsp
Coriander leaves handful
Salt to taste
How to make the Kulchas
In a bowl, add all the ingredients for the kulcha, knead well to a soft stiff dough. Let it rest for 10 mins, until you make the stuffing.
Grate the paneer in a bowl. Add the red chilli powder, cumin powder, salt, garam masala and coriander leaves to the grated paneer.
Mix everything well. Divide into small sized balls
Divide the dough into equal balls, Flatten the balls and stuff with the paneer filling. Seal the ball completely. Dust and roll out.
Heat a nonstick pan, grease with oil and cook the kulchas on both sides.
Serve with curds and pickle of choice.
