Eggless Yogurt Fruit Jam Brownie

After an unexpected gap, I am back with another eggless brownie. Today's brownie is made more with curds and mixed fruit jam. The resultant brownie was more like a jam sandwiched cake and was a hit with the kids. Hubby dear though he said he too liked this brownie, concluded the known fact that our boys love anything chocolate.

I have a huge collection of brownie recipes bookmarked over the years and I felt this bake-a-thon was the right time to get them all done. I saw this here and was inspired to try it myself. The brownie has that prefect crack on top. Now I wonder how my cakes are!


Coming to the situation on hand about our city. We have not been having rains for the past couple of days and things in most places are almost back to normal. Schools are scheduled to reopen on Thursday and we are ardently praying it should. Kids had an unexpected winter holidays and all of us are bored of it. Now they are longing for the schools to resume.

While things are slowly getting back to normalcy, there are still some areas that are badly affected that endless volunteers are still working day and night. This is a dedication to those people. I wish I could bake some brownies to all of them!





Eggless Yogurt Fruit Jam Brownie

Ingredients Needed:

All Purpose Flour / Maida - 1 1/4 cup
Cocoa Powder - 1/3 cup
Baking Powder - 3/4 tsp
Brown Sugar - 3/4 cup
Butter - 1/3 cup
Curds/Yogurt - 1/2 cup
Milk - 1/4 cup
Mixed Fruit Jam - 1 1/2 Tbsp

How to make Eggless Yogurt Fruit Jam Brownie

Preheat the oven to 185 C. Baked for 30 mins.

In a mixing bowl, beat brown sugar and melted butter for couple times. Mix in curds and blend well.

Next add the mixed fruit jam and blend.

Add the flour, cocoa powder and continue blending. Finally add the baking powder.

Depending on the consistency, add the milk slowly. Blend again.

The consistency was of slight flowing state.

Pre heat the oven at 185C.

Line the baking tray with a parchment paper. Pour the prepared batter into it and bake for 30 mins.

Remove from the oven and cool on the wire racks.
