For the second day of Salads, I made a sprouted Moong Salad with vegetables. Sprouting the moong makes it very healthy and with crunchy onions and carrot, it makes a very filling salad.
With kids having their diwali holidays, they spend their time planning on playing with the crackers. Then the evenings spent catching up with the tele. I have given up on crackers long back. And it wasn't a big time other than all of us coming together at one place.
So with minimum time I got, I managed to do a quick update here. Hope you enjoy!

Moong Sprouts Salad
Moong Sprouts - 1 cup
Carrot, finely chopped - 1/2 cup
Onions, finely chopped - 1/2 cup
Green Chilies, finely chopped - 2 medium.
Salt to taste
Lemon Juice - 2 tsp
How to make the Salad
Sprout the moong and have it ready.
Take the finely chopped onions, carrots and sprouts in a bowl, add salt, green chilies and lemon juice. Toss well and serve.
If you are going to serve it later, just mix and chill it. Add the dressing just before serving.
