What to cook up for weeknights is always a dilemma. It needs to be fast, it needs to be nutritious and not much chopping and fuss required. I have lined up my weeknight dinner menu for this week. All of it is vegetarian and some of it vegan.
MONDAY
Pasta in a two minute sauce, sounds unreal? Well, it's for real and I do this quite often to rustle up dinner under 15 minutes. Fry up some eggs on the side, for extra protein.
TUESDAY
Cauliflower and peas kootu- no grinding of masalas, no chopping onions and tomatoes, just the kind of comforting and quick meal you need on a weeknight. Eat with reheated store bought rotis or with dosa or steamed rice.
WEDNESDAY
Black eyed peas curry (Lobia / Karamani)- Soak the black eyed peas in the morning. A small pressure cooker or pressure pan takes care of the rest in the evening. The masala can be ground in a bigger batch and frozen in an ice cube tray and used through the month in various dishes. Serve with rice or rotis.
Roasted pumpkin soap with lemongrass and ginger - A hearty, healthy soup to for a rainy day evening. Cooking the pumpkins on stove top doesn't require any supervision, so you can get your other work done in the meanwhile. Pick up a good loaf of bread. Slice thick and toast in the oven or on a skillet until somewhat crisp. Serve with soup along with a quick cucumber, tomato, lettuce salad.
FRIDAY
Eggplant gothsu - another Tambrahm dish with minimum fuss and maximum flavour. The eggplant does need to be roasted on an open flame for 7-8 minutes, but you can multitask by getting the other prep for this dish ready when it is roasting. Serve with rice or a quick rice-moong dal pongal in the pressure cooker.
