Eggless Banana Walnut Bread

For the final day of cooking for BM#55, under Bookmarked recipes, I remembered a very old recipe that I had been wanting to bake since the moment it was shared. While I wanted to make another gravy and make it a series of gravies as well, I was compelled to make something else as well. Amma had two big bananas that were fast becoming very ripe. She sent them across and before I could even think, the bananas were going black.

So I chopped up the banana, add a tsp of sugar and refrigerated, hoping I will bake by night. Day simply flew and it was almost next day that I finally baked it. Hubby dear loved it so much. Infact when I was asking him if he would want a banana walnut cake, he said he remembers me making it already. I was much happy that he was also thinking about the blog!

Anyway I said this recipe that I wanted to try is a different combination that I haven't shared yet. so I set out to make. As I said planning to make something takes more time than the actual cooking time these days and I quickly wanted to bake it right then. The cake turned out so delicious, with just the right sweetness and so much like the tea cakes I am so fond of. Infact I felt I just couldn't stop with one slice!

Even though it had walnuts in it, kids loved it too. So its a recipe worth making again and again.

When Bharathy had posted it many years ago, I loved her set up and the way the loaf had turned out. I am so glad I finally made it. Looks like this recipe has traveled across many spaces. And it joins my Banana Bread collection.

Banana Walnut Bread

Preparation time - 10 minutes
Baking time - 35 minutes +/- (it took me 40 mins)

Ingredients Needed

Ripe bananas - 3 small (or 2 large)
Maida / All purpose flour - 3/4 cup
Wheat flour - 1/2 cup
Brown sugar - 3/4 cup (I used 1/2 cup B sugar and 1/4 granulated sugar)
Milk - 1/4 cup
Oil - 1/4 cup
Curd - 2 tbsp
Cooking soda - 1 tsp
Vanilla essence - 1/2 tsp
Walnuts - 10

How to make the Banana Walnut Bread

Sieve maida, wheat flour and cooking soda together and keep aside.

Chop bananas into small pieces and grind it along with sugar and  milk into a smooth paste. Next add vanilla essence and curds and grind again.

Transfer the ground mixture in a large mixing bowl. Mix in oil. Finally fold in the sifted flour mixture into it.

Chop the walnuts and mix them into the batter.

Preheat the oven to 185°C.

Grease a bread tin with butter and dust all purpose flour evenly. Pour in the batter into the bread tin and bake at 185°C for 40 mins.

Remove from oven and allow the bread to cool on wire rack for a while before cutting out slices.
