Kim's Chicken Dish

We had the most delicious chicken for lunch last week when we went to our friend's house.   It was incredibly tasty, and I think it's pretty safe to say that nobody was worrying about calories that day!  (What with this chicken dish and the Malva Pudding and all!)  It's nice to indulge once in a while and this chicken was incredibly tasty.  My friend Tina got the recipe from her daughter Kim and it was sooo good that I had to make it for the Missionaries when they came for tea.   Once again no complaints.  I am calling it Kim's Chicken Dish.

I think it actually comes from a certain brand of chutney originally, but what the hey, to me it will always be Kim's Chicken dish.  Not only was it really delicious, but it was so simple to make that a kid could do it I think.   And we all know how much I love simple and delicious meals.

I don't know about you, but simple and delicious always works for me.  It also uses things I always have in my larger and freezer.   Dry onion soup mix, mayonnaise, chutney and chicken.   I used legs, and I'll be honest here, it was pretty economical too.

I paid £2.25 for the packet of chicken legs.   I paid less than a pound each for a jar of mayonnaise and a jar of chutney (I used mango, I think it works best) and I already had the onion soup  mix in the cupboard.   So, maybe it cost about 30p for that.  All told . . . less than a fiver for a delicious dish that everyone enjoyed and that I felt comfortable enough to feed to company.

It's as simple as mixing the ingredients for the sauce together, pouring it over the chicken, covering it and then baking it.   You uncover it for the last bit so that the chicken browns nicely and as you can see it looks really, REALLY delicious (and it is!)  You get nice and tender chicken and a beautiful sauce.  I served it with baked potatoes and green beans and peas and corn.  I also made a carrot salad, but I'm the only one who ate that.  What is it about men and salad??

*Kim's Chicken Dish*
Serves 4 to 6

A delicious oven casserole with tender chicken and a fabulous sauce.  Easy to make.   Who knew delicious was so simple!  I got this recipe from my friend Tina's daughter Kim. 

2 kg whole chicken, cut up
(I used legs)
1 (40g) packet dry onion soup mix (4 serving size)
225ml of boiling water (1 cup)
225g of chutney (1 cup)
(I used mango)
225g of mayonnaise (1 cup)
salt and pepper to taste

Preheat the oven to 180*C/350*F/ gas mark 4.  Have ready a baking dish with a lid large enough to hold the chicken pieces in one layer.  (If you don't have a lid, use a double layer of foil.)

Wipe the chicken dry and season to taste with salt and pepper.  Place into the baking dish in a single layer.  Mix together the soup mix, water, chutney and mayonnaise.  Pour over the chicken.  Cover and then place in the oven to roast for one hour.   Remove the cover and bake for 15 to 20 minutes longer to brown the chicken.  Serve warm.
