Whenever you make karele ki sabzi do not throw the peels. We can make use of them in many ways.. Today I made a simple sabzi with the peels.
Ingredients:
Karela peels .. 2 cups
Onion .......... 1
Tomato ..... 1
Green chillies .... 1-2
Ginger ............. 1 tsp (grated)
Garlic ................ 1 tsp (crushed coarsely)
Coriander leaves .... handful
Turmeric powder ... 1/4 tsp
Coriander powder ... 1 tsp
Cumin powder ....... 1/2 tsp
Red chilli powder .. 1/8 tsp (optional)
Salt ................... to taste
Oil ...... 2-3 tbsps
Method:
1. Wash the karela peels and marinate them with salt. Keep them for few hours or refrigerate over night.
2. Heat oil in a pan and add the marinated peels discarding the water.
3. Saute them for 4-5 minutes until the colour changes.
4. Add the sliced onion and stir fry for 2-3 minutes until it gets light brown colour.
5. Now tip in the slit green chillies, tomato slices, ginger and garlic.
6. Saute until the tomato gets cooked.
7. Add the spice powders and salt. Add very little salt as the peels are already marinated.
8. Mix everything well and add the coriander leaves towards the end.
