How to Make Tandoori Masala

A fragrant spice mix to make tandoori dishes


Tandoori food is a favourite among Indian so many vegetarian dishes are made by roasting or grilling in tandoors/clay ovens.Tandoori paneer tikka, tandoori gobhi,mushroom and wide range of tandoori dishes are enjoyed all over India and world wide A flavorful yogurt based marinade is used to make tandoori dishes and the most important ingredient of this marinade is tandoori masala which gives the authentic flavour .


Tandoori masala is a flavourful spice mix which is usually used to make tandoori dishes and barbecues. It has a smoky, fragrant and earthy flavours. Whole aromatic spices are used to make tandoori masala.Though readymade tandoori masala is easily available in the market but the quality was not as good as you get by making your own blend at home.Ready made tandoori masala also have added red food colour to give that bright colour which I don't like to add in my masala.


To get fresh flavours don't use powdered spices to make this as powdered spices loose their flavour after some time so use fresh and whole spices to make tandoori masala and don't make in large batch as fresh taste best.Addition of food colour is optional you can add if you like.

INGREDIENTS-


List-1


  • Coriander seeds /Sabut dhaniya -25 gms

  • Cinnamon /Daalchini - 4 inch

  • Carom /ajwain -1/2 tsp

  • Pepper corn/sabut kali mirch -25 gms

  • Cloves /laung -1/2 tsp

  • Green cardamom /elaichi-1 tbsp

  • Black cardamom /badi elaichi -2

  • Mace/javitri -2

  • Cumin /jeera -25 gms

  • Dried fenugreek leaves /kasoori methi -1.5 tbsp

  • Kashmiri mirch powder -1.5 tbsp

  • Chili powder -1 tbsp

  • Ginger powder/Saunth - 15 gms

  • Black salt /kala namak -1 tbsp


PROCEDURE-



  1. In a heavy bottom pan add ingredients of list -1

  2. Roast on low flame till it start giving a nice aroma.(don't over do it)

  3. Take out in a plate and let it cool down completely.

  4. Take the spices in a mixer jar and grind.

  5. Now add the ingredients of list 2 in the jar and grind together to make a fine powder.

  6. Take out in a bowl and let it cool down completely.

  7. Store in a air tight jar.
