I adore soups year round, but there is something especially comforting about a steaming bowl of goodness on a cold autumn or winter day. Bring in the root vegetables for a nourishing dish to fight off that perpetual chill. Beet borscht is probably one of my all-time favorite winter soups, but I've never thought to make it with lentils until recently.
