Vegetarian Stir Fry

There are stir fries and there are healthy recipes for satisfying vegetarian stir fry dinners, especially designed for non-meat lovers. Stir fries are an easy way to make dinner on the table fast with minimal cleanup to do after. This is a very healthy vegetarian recipe that actually pairs fiber-rich vegetable with alternative sources of protein, like seitan, tofu, and nuts to deliver a satisfying meatless meal. It so versatile that you can throw your favorite vegetables in the skillet and get cooking with this healthy vegetarian recipe, just like vegetable fried rice and sweet and sour tofu. So let us get started then.


THE GARDEN FRESH STIR FRY WITH SEITAN: Seitan is a toothsome texture and taste veggie making it the perfect vegetarian stir fry ingredient that even non-vegetarian eaters will learn to love. Make it a meal come true. Serve this over rice noodles to soak up the rich sauce and mix up some lightly sweetened iced green tea to drink with. The recipe can make four servings and can be prepared in thirty five minutes.


THE INGREDIENTS: One half cup dry sherry or Shao Hsing rice wine One half cup water Two tablespoons of brown sugar Two tablespoons of lime juice Two tablespoon of hoisin sauce Two teaspoons of cornstarch One fourth teaspoon of salt Two tablespoons of any vegetable oil, separated into two, use canola oil if you have them One pound of seitan, water packed, preferably chicken style, drained, patted dry and broken into bite sizes pieces (please follow note on ingredient's package) One fourth cup of chopped unsalted peanuts Two teaspoons of minced fresh ginger Four carrots, thinly sliced Two bell peppers, thinly sliced One fourth cup chopped fresh cilantro (optional for garnishing only)


LET'S MAKE MAGIC THEN: Start by preparing your sauce. In a mixing bowl, whisk or pour in the sherry or rice wine, the water the brown sugar the lime juice the hoisin sauce and the salt. Stir thoroughly until they are combined and smooth. Make sure the sugar has dissolved too. Set aside for frying.


Heat a wok or a large skillet on medium high heat on your American stove. Add one tablespoon of vegetable oil and wait till it starts to smoke.


Add the seitan and cook by stirring occasionally until it is crispy for about four to six minutes. Then add the remaining one tablespoon of oil with the peanuts and the ginger. Cook stirring often until they are fragrant for another one minute.


Then add the carrots and the bell peppers and cook stirring constantly for about one minute. Toss the veggies if you can. Be careful though.


The n add the sauce to the veggies and stir and toss to coat with the ingredients. Reduce the heat to medium and cover the pan to cook until the vegetables are crisp tender and the sauce is thickened, approximately three to four minutes more.


Before you removed the veggies from the pan, sprinkle the cilantro over the veggies and stir to combine.


Serve immediately while it is hot with rice noodles or simply steamed rice.
