Here is the chicken recipe that Amma recently made. We made it first time for the party and everybody liked it. However Hubby dear felt he needed little more spice, but of course spice is something you can increase as you wish. I simply had to go by what others had to say on this dish. And it's not your typical dry dish. You can make this as a side dish for rotis as well.
The rains in Madras is making us all go nostalgic. It's been years since it rained during this time. It's almost like I am back during my school days, when it used to rain the whole of July and August. Let's hope it continues and our water problem gets solved!

Coriander Cashew Chicken
Ingredients Needed:
For the Marinade
Chicken - 1/4 kg
Coriander leaves - 1/4 cup
Lemon - 1/2 piece
Turmeric
Green Chilies - 3 -4 long
Salt to taste
For Roasting
Whole Spices
Cloves - 2 -3
Cinnamon - 2"
Cardamon - 2
Oil - 2 tsp
Onions - 1 medium
Ginger Garlic paste - 1 tsp
Cashew - 1/4 Cup
Coriander powder - 1 tsp
How to make Coriander Cashew Chicken
Wash the chicken and cut into equal pieces. Make a paste of coriander leaves along with green chilies. In a bowl, take the chicken along with coriander paste, lemon juice, turmeric and salt. Let it marinade for 30 mins.
Then heat a non stick pan with oil. Add all the whole spices. Then add the onions, followed by the ginger garlic paste.
Once the onions turn colour, add chicken marinade along with the cashew paste, coriander powder.
Simmer and cook till it's almost well done.
Now add a cup of water and bring to boil, making sure the bottom doesn't get burnt.
Simmer and cook covered. It gets done by 15 - 20 mins.
Serve as a starter
Notes:
This is not a dry dish. Increase the spice as required.
