Herbed Garlic Cheese Bread


Have you ever bought ready made garlic cheese bread at the shops?  I have and it is gross.  Sorry if I have offended anyone. I seriously doubt they even use real butter in it.  It smells garlicky, yes, but also hugely artificial!   I much prefer my own homemade Herbed Garlic Cheese Bread.


There is nothing artificial here.  It is nothing but pure ingredients.  Butter.  Freshly grated Parmesan Cheese . . .  not the already grated.  Grating your own is far superior.


Fresh garlic cloves . . .  peeled and minced.  I add three for a large loaf, but if you want more you could certainly add more.  I think three is the perfect mount however.


When I make it at this time of year I take advantage of the fresh herbs growing in the garden.  But of course if you cannot get the fresh herbs you can use dried, just cut the amounts in half.



You can use any kind of loaf with this really, but I like a nice crusty French loaf.  Not a baguette, but a full sized loaf. You can also use a sour dough loaf.   This is an organic French loaf. 



Its such a simple thing really.  Mix together the butter, herbs, seasoning and half the cheese and spread it on the cut edges of a loaf you have cut in half horizontally.  Then sprinkle on the remaining cheese, cut almost all the way into 2 inch thick slices, wrap in foil and bake.  So yummy!

 Perfect for all of your summer BBQ dinners, or with your pasta dinners, or even as an appetiser while you and your family or guests wait for the main course to be done.  Oh, its even great with salads!  And, simple really. Such a simple thing to do.


With just enough butter, just enough garlic, just enough herbs and just enough cheese. You can't go wrong.


*Herbed Garlic Cheese Bread*
Serves 8

This is the perfect bread to go with pasta or your BBQ dishes.  It also makes a great appetizer while everyone is waiting for dinner.  This also makes great use of all the fresh herbs in the garden at the moment. 

125g of butter at room temperature (1/2 cup)
3 cloves of garlic, peeled and finely chopped
90g freshly grated Parmesan cheese (1/2 cup)
1 TBS finely chopped fresh basil
1/2 tsp finely chopped fresh thyme
1/4 tsp fresh oregano leaves
fine sea salt and freshly ground pepper to taste
1 large french loaf or sourdough loaf 


Preheat the oven to 200*C/400*F/ gas mark 6.  Have ready an oven tray and two very large sheets of aluminium foil. 

Cream together the butter, garlic, 1/2 of the cheese and all the herbs, salt and pepper.  Cut your loaf of bread with a serrated knife in half horizontally through the middle.  Spread half of the butter mixture onto each half loaf.  Sprinkle with the remaining cheese.  Using the same knife make cuts two inches apart down through each half loaf about 3/4of the way down, leaving it attached at the bottom.
Cover with the aluminium foil, leaving a gap at the top so that the cheese mixture doesn't touch the foil.  Bake for 10 to 15 minutes, open up the foil and return to the oven for a further 5 minutes.  Serve immediately.



This is so good I don't know why you are still sitting there reading this.  You need to get to the store now and pick up that fresh loaf of bread so you can make this for supper tonight!  Bon Appetit!

La Colombe Coffee Roasters May Be Opening in Boston's Seaport District

A Philadelphia-based group of coffee roasters and cafes could be expanding to one of the hottest parts of Boston.

According to a Licensing Board page within the City of Boston website, La Colombe Torrefaction (which is also known as La Colombe Coffee Roasters) is planning to open on Northern Avenue in the city's Seaport District, with the space including a cafe area with seating and proposed hours of 7:00 AM to 7:00 PM. If approved, this would be either the second or third location to open in Boston, as another location may be coming to W Newton Street in the Back Bay/South End area at some point. The first shop to open in the city is on Atlantic Avenue across from the South Station bus terminal and parking garage.

Currently, other locations of La Colombe can be found in the Philadelphia area along with New York, Washington, D.C., Chicago, and Los Angeles.

PRODUCT REVIEW: Ethical Kitchen - Life-changing Treat Boxes


Ethical Kitchen is an alternative take on the booming subscription box service market. Brighton-based and with a social conscience, they are launching with a series of coffee, chocolate and healthy snack boxes, all curated from brands that share their values.

There are two options;

The Ethical Warrior box contains a bag of freshly roasted speciality coffee, bars of premium chocolate and healthy snacks for £21.15 per month (inc delivery).

Or The Ethical Snacker box contains premium chocolate and healthy snacks / snack bars for £11.25 per month (inc delivery).



I tried out the Warrior box where it sat, very welcome, on my work desk, primed for my mid afternoon energy slump. So first to be consumed, alarmingly quickly, were the snacks. Very cutely packaged was the Squirrel Sisters (I love a squirrel, me) Cacao Orange Raw Energy Bar energy bar in a classic, zingy flavour combination. Really delicious, slightly squidgy and lovely texture. The pack had two bars so, with great restraint, lasted me a couple of days. I love these types of raw, natural bars - they satisfy a sweet treat urge but do it with a nutritious advantage.



Much in the same style is the Primal Pantry Apple and Pecan Paleo bar. Grain/gluten/sugar/daily free, natural and cold-pressed in the UK, it was again really enjoyable and surprisingly indulgent for a bar simply made with dry fruit, nuts, spices and almond oil.

I really like the Rude Health brand anyway (best Almond milk on the market and kickass branding), their pumpkin bar was a nice flavour alternative that works well with those base ingredients.

Surprisingly delicious were the Hippeas Sweet and Smokin' Organic Chickpea puffs. Crisps are my weakness so much so, I've banned them from the house but these are very saintly plus they support Farm Africa, a charity working with farmers in Sub-Saharan Africa to grow their communities and themselves out of poverty.

The guest coffee was Brighton's Redroaster Sanctuary Blend. As you've probably worked out, I'm a bit of a fan of the stylish cafe and love the idea that the roastery, right here in Kemptown is still one of the UK’s first specialist coffee houses and only organic certified roastery in the South. You can have the coffee either as beans or ground. I tend to use a classic Bialetti Moka pot (die-hard Italian I am) and the grind was a bit too coarse to filter through properly, so will probably stick the rest in a cafetiere. Still it's a lively, slightly fruity blend and really smooth. The packaging is lush too.

Finally, the bars of chocolate were the biggest surprise. I'd seen the Ombar brand in the local health food shop but just thought it was yet another raw chocolate bar. But all three were SO ENJOYABLE (yes, in CAPS) - so much more flavour than your typical chocolate and much more refined than expected - I've had some pretty awful raw chocolate experiences! Plus, they are full of live cultures and impressively healthy ingredients - no refined sugar or dairy. The Blueberry and Acai had serious tang, Coco Mylk was smooth and creamy and the 72% dark showcased the core product at its best. I enjoyed them so much I'll 100% purchase again. 

As well as the social credentials, it's a great way to be exposed to new brands and products. Subscription boxes are a luxury but there's no denying they're a fun one and an affordable treat to yourself or awesome present. If you are a lovely boss, you can also order office boxes for your staff to sharpen up their efficiency post 3pm.


The box selections will change monthly and are beautifully designed (one of the founders is a designer - natch). But their differentiator is clearly their values. As well as supporting brands that already do good work, 50p from every box will go to community projects run by their charity partners. Their first partner is Point Foundation, who do amazing work in Rwanda, helping disabled and special needs children to get an education they otherwise wouldn't. Deliveries within the Brighton area will, where possible, be made using a local carbon-neutral bike courier called Recharge Cargo

Subscriptions are available as one, three or six month packages. The first box will be beautifully gift-wrapped, contain a personal message and a discount code to use in the Ethical Kitchen shop which has some lovely products. So ideal for that gift idea.

Ferry Street Food and Drink in Malden Is Closed; Exact Status Unknown

A restaurant and bar north of Boston that features New American fare and craft cocktails is shuttered, and it is not known what the future might hold for the space.

According to a source, Ferry Street Food and Drink in Malden is closed with its windows papered over, and its website is now under construction while its Twitter page has been deleted. There is no indication as to whether the dining and drinking spot could return or if a new place is moving in, as its site simply says "Please check back for an update soon."

Ferry Street Food and Drink first opened in May of 2014, with the restaurant and bar saying at the time that it was "Malden's first and only gastropub." A link on the website for the spot had indicated that the space could be haunted, saying that a customer at the old Jimmy O'Keefe's Restaurant there "died in a slip down the basement stairs" and "is rumored to be seen sitting in his regular stool."

The theme is just going to be Protein Rich Dishes

We are not doing any diet theme. The dishes are not going to be High Protein, Low Cal, Low Carb etc.

Since we are not qualified to talk about the dietary aspect of an ingredient, we will only focus on making the dish protein rich. We will not talk about the percentage of protein in the dish as well.

There is no restriction on the cuisine, course or ingredient.

Your star ingredient used should be listed as protein rich ingredient, so it means you can also combine two protein rich ingredients to make your dish.

You can either choose to pick one ingredient for all 26 or do a mix. There is no restriction on weeks as well.

Rocky Mountain Brownie ~ Eggless

Rocky Mountain Brownie is a rich decadent brownie baked with a combination of nuts and chocolates. In this version, I have made it eggless using a combination of yogurt and oil. Topped with assorted roasted nuts and chocolate chips.

I know Brownie was a tough one to make these days as I seem to have covered so many versions. For the previous one, Chinnu said I have already baked it and for today’s version also, Athamma said the same. Well, they fail to understand that even a different ingredient makes it a new dish for us. Anyway as long as they like it and enjoy, I have no issues.

In today’s brownie, which is supposed to be a spin of the famous Rocky Road Brownies, where marshmallows are a must for topping. In this version, the brownies are baked with assorted nuts and chocolate chips without marshmallows. So I felt it was much better for me.

I am yet to click the sliced pictures as I want the brownie to rest in the fridge for a while before slicing it. So until then enjoy this full tray!

Rocky Mountain Brownies

Ingredients

For the brownies
1.25 cup All Purpose Flour
1/4 cup Cocoa Powder
2/3 cup Sugar powdered
1/4 cup Hot Water
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 cup Dark Chocolate Chips
1/3 cup Cooking Oil
1/2 cup Curds /Yogurt

For Toppings
1/4 cup Hazel Nuts
1/4 cup Almonds
1/4 cup Walnuts
2 tbsp Dark Chocolate Chips
2 tbsp Dark Chocolate Chips small
2 tbsp Semi Sweet Chocolate Chips small

Chop the nuts for topping and Microwave for a minute, toss and again microwave for a minute. Keep it aside.
Melt the dark chocolate chips for the brownie for 1 minute in MW.
Using a spatula whisk it well. Add cocoa powder, then powdered sugar, combine everything
Next add the oil, followed by curds. Mix everything.
Now add the flour and combine gently.
Add the baking powder, baking soda and slowly add the hot water.
Combine and do not mix too much.
Preheat oven to 185C.
Grease and line a 8″inch Baking Pan.
Transfer the batter to the tray and pat it down.
Top with the tossed nuts and chocolate chips, save 2 tbsp dark chocolate large
Bake for 25 minutes at 185C
Once done, add the saved chocolate chips and bake again for 5 mins.
Let it rest overnight or for at least 4 hours. Refrigerating also should help.
